veggie chilli and nachos.

I love a good hearty mexican chilli once in a while. even the hubby liked it.


olive oil or sunflower oil.

1 red onion chopped, although i used white.

3 mixed peppers, sliced

2 dried chillies soaked in hot water for 10 minutes the chopped.

2 tsp cumin

2 tsp of coriander

1tsp smoked paprika

1tsp dried oregano

3 garlic gloves sliced

460g passata

1 tbsp red wine vinegar

1tbsp maple syrup

500ml hot vegetable stock

a can off black beans rinsed and drained.

cannellini beans

fresh coriander

200g of tortilla chips (i used chilli heatwave doritos)

spring onion to chuck on top, although i had non in.

cheese is optinal


heat the oil and cook the onion for few minutes. add the peppers for 10 minutes more. add the chillis, spices and garlc then fry for 2-3 minutes.stir in the passata,vinegar,syrup and stock then bring to boil. turn the heat to medium and cook uncovered for 30 minutes.

heat the oven to gas mark 7, add the beans, chopped coriander and lime juice to the chilli on the hob and cook for few more minutes.

take off the hob and pour chilli into a heatproof bowl and cover with tortilla chips and layer of cheese. bake for 10 miutes untill cheese as melted. (im vegan but best vegan cheese for melting is applewood smoked)

scatter sping onions on top and jalpenos.

i had mine with boiled rice and garlic bread.
